If humans were only to eat underground animals..? Effects?

Let's suppose humans evolved to live underground. They lived in dirt tunnels and fed off of worms, badgers, shrews and other underground creatures. What would the effects be on the evolution of the humans? If their skin stopped producing melanin? And how would their bodies adapt as effects of the nutrients of the underground creatures? (ie, if they're high in protein) Thanks for your help!
